How long does kimchi last in the refrigerator?

Kimchi can last up to a year without changing in flavor drastically, but some restaurants in Korea serves kimchi that has been fermented for more than two years. Kimchi, much like fermented food in the west like cheese and salami, changes once the humidity, the temperature, and the oxygen exposure vary throughout the year.

My kimchi is not as fermented as I wanted. What should I do?

If you desire more tangy, pickled flavor, we recommend leaving your kimchi out of your refrigerator for a day to expediate the fermentation process. We advise that you to check the kimchi at the end of the day to make sure that it is at your desired tanginess. We do not hold liable for any unattended bottles once it arrives at the destination.

What goes well with kimchi?

You have your kimchi staple dishes: Kimchi pancake, kimchi stew, kimchi fried rice, kimchi taco, kimchi with ramyeon (yes ramyeon, not ramen), kimchi with steak… but our kimchi can be enjoyed just like a salad. Whenever you are eating greasy food, pair it with kimchi! It is like drinking wine at Brazilian bbq place. 

Also, believe it or not, there are wines from Calabria region in Southern Italy and champagne from France that goes well with kimchi.

The bottle looks puffed up and about to explode! Is this safe to eat?

From the moment your kimchi is bottled by our craftsmen, it will start to ferment. When it is exposed to extreme heat, the fermentation process will accelerate, and the kimchi will produce lactobacillus which causes the bottle and the lid to puff up. This may cause leakage in the package as the gas pushes the juice through the lid. 

This is normal, and we will do our very best so that your kimchi arrives in a cool condition just like when it was first bottled (and no leakage!).
